A delicious little treat for morning tea or after dinner.
2 Ripe Gold Kiwifruit
1 Cup Buckwheat Flour
½ Cup Amaranth Flour
1 Tsp Baking Powder
½ Tsp Baking Soda
1 Cup Suncoast Gold Macadamia Milk
½ Tsp Pure Madagascar Bourbon Vanilla Extract
¼ Cup Unsweetened Shredded Coconut
1 TB Stevia Syrup
Preheat the oven to 350°F / 175°C.
In a bowl, scoop out the kiwi flesh and mash up until you get a smooth texture.
In a large mixing bowl, combine the mashed kiwi with all the other ingredients. Stir together until you get a nice smooth muffin batter.
Line a medium muffin pan with 12 liners and fill each liner with 3 Tbsp of batter.
Bake the muffins for 20 minutes, remove and allow to cool.
Serve warm, cold, with your favorite nut butter, coconut butter, maybe even some chocolate stevia syrup. Enjoy!
