Chocolate ganache

This chocolate cake is so tasty, and it is dairy free!

Ingredients

175g (1 and ¼ cups) plain flour

60g (3/4 cup) cocoa powder, sifted

2 teaspoons baking powder

90 g (1/2 cup) brown sugar

45g (1/4 cup) caster sugar

2 large eggs lightly beaten

120 ml (1/2 cup) Suncoast Gold unsweetened macadamia SCG Milk

120 ml (1/2 cup) Suncoast Gold macadamia oil

1 teaspoon vanilla extract

60 ml (1/4 cup) hot black coffee

Chocolate ganache

150 g dark chocolate

1 tbl Suncoast Gold Macadamia Oil (not available online)

Method

  1. Preheat the oven to 160°C
  2. Line a cake tin with baking paper
  3. In a large mixing bowl, sift the flour, cocoa powder and baking powder. Add the sugars and stir to combine
  4. Make a well in the middle of the dry ingredients and add the eggs, macadamia milk, macadamia oil and vanilla and gently mix together. Pour over the hot coffee and stir gently until a smooth chocolate batter forms.
  5. Pour into prepared cake tin and bake in the oven for approximately 30 minutes or until a skewer inserted in the middle comes out clean. Transfer to a wire rack to cool completely.
  6. To make the ganache, add the chocolate and the macadamia oil to a small bowl. Heat in the microwave, stirring every 20 seconds, until melted.  Leave to stand, stirring every five minutes until it thickens slightly.  Spread ganache all over the cake.
