A perfect platter dip or on its own with veggie sticks.
1kg sweet potato, peeled
50g Macadamias, lightly roasted
50g rocket, washed and dried
60ml Suncoast Gold Macadamia Milk
Suncoast Gold Macadamia Oil
Steam the sweet potato until slightly under cooked. Drizzle with Suncoast Gold Macadamia Oil, season and bake at 150ºC/300ºF until soft.
Place Macadamias and rocket in a food processor and process until roughly chopped. Add sweet potato and Suncoast Gold Macadamia Milk and pulse on the processor until roughly processed.
Season and serve.
