A deliciously healthy curry with a hint of macadamia.
50ml Suncoast Gold Macadamia Oil
1.5kg chicken thighs, skin removed and diced
1 onion, finely diced
2 garlic cloves, crushed
1 tsp ginger, grated
½ tsp turmeric
½ tsp ground cumin
½ tsp ground coriander
Pinch chilli powder
500ml Suncoast Gold Macadamia Milk
Coriander for garnish
Heat the Suncoast Gold Macadamia Oil in a large saucepan or wok. Sauté the onions, garlic and ginger until soft. Add the spices and cook until aromatic. Add the chicken and cook while stirring for 5 minutes. Add the Suncoast Gold Macadamia Milk, bring to the boil and turn down to a simmer.
Cook until the chicken is cooked. Season.
Serve with rice, garnished with fresh coriander sprigs.
